We are a family company, where the tradition of cheese making dates back to the 19th century. We started the production of Swojski cheese in 1999 by obtaining milk from our own farm.  


Thanks to many years of experience and continuous work on improving the production process, we have managed to create a product of the highest quality, distinguished by its unique taste.  


We are pleased and honored to create a cheese that is devoid of any artificial preservatives, dyes and flavor enhancers, and to contribute to the Polish market of regional and traditional products.


Korycin cheese "Swojski" - is a regional product, produced in the Podlasie commune of Korycin, located in the north-eastern part of Poland. Established in the 16th century, the village of the same name is a charming area, distinguished by its clean environment, nestled between the Knyszyńska Primeval Forest and the Biebrza National Park. According to the legend, the inhabitants of Korycin learned cheese production from the Swiss who, during the Swedish Deluge, in the years 1655-1660, took part, on the Polish side, in the battles in Podlasie. Some wounded soldiers were recovering in the Kumiał farm near Korycin. Some of them settled in Poland permanently and donated the cheese-making recipe to the local people.


Korycin cheese is made from fresh cow's milk, with the addition of rennet and salt, which also acts as a natural preservative. In traditional production technology, rennet, i.e. the enzyme responsible for the coagulation (curdling) of milk, was obtained from calf stomachs grated into powder. Today, only dairy rennet is used.  In the next stage of production, the cheese, still in the form of a curd, is formed into an oval lump with a diameter of 30 cm and a weight of up to 3.5 kg. About 30 liters of milk are needed to produce this amount of cheese.


At the final stage of production, the cheese, in the right form, is transferred to a cool room. There, properly cared for, it matures from a few days to even two months until it reaches the desired stage of maturation.


Nowadays, following the culinary preferences of customers, producers enrich cheese with various natural additives, such as: dried herbs and fruit, garlic and even walnuts and olives. The maturation period of the cheese is also much shorter.


Korycin "Swojski" cheese is a completely natural product. It does not contain any artificial preservatives, chemical improvers or dyes. It is a maturing cheese that changes its taste, texture and color depending on the aging period. It is a healthy product with high nutritional value, produced from fresh, raw milk obtained from cows freely grazing in the green meadows of picturesque Podlasie.


Korycin cheese "Swojski" is appreciated not only by the local population. He is gaining more and more recognition in Poland and abroad. Enjoying the recognition of customers, he has won many prestigious awards.


In 2005, Ser Korycin "Swojski" was entered on the list of traditional products at the Ministry of Agriculture and Rural Development. And in August 2012. was registered by the European Commission, obtaining the "Protected Geographical Indication" certificate, which limits its production only to the areas of three communes of the Podlaskie Voivodeship, located in the Sokólski poviat: the communes of Korycin, Suchowola and Janów.



There are many “Swojski” Korycin Cheeses on sale, of dubious quality and origin. We would like to remind you that Koryciński "Swojski" cheese is a regional product, produced by many different farms. We are not responsible for the quality of cheeses made by other producers. The original "Swojski" Korycin Cheese should have a label with the "Protected Geographical Indication" logo and the "Swojski Ser Korycin" logo. The customer has the right to ask the seller to provide a quality certificate confirming the origin of the product.


Our cheese has a Quality Certificate issued by the Provincial Inspectorate of Commercial Quality of Agricultural and Food Products and the logo of the Protected Geographical Indication.



Koryciński cheese should be stored in a dry and cool place (cellar, refrigerator). It can be stored in food foil, thus inhibiting its maturation process. However, if you want the cheese to mature, it should be stored without packaging, or covered with air-permeable material and transferred to the other side every day.


Koryciński cheese is suitable for consumption for up to 2 months. During this time, the cheese will mature, which is manifested by a change in its texture, color and taste. It can also be frozen.
